It means the silk thread used on your letter of choice has been dyed in such a way to give a variating colour throughout the thread, in this case between shades of blue and white. Unlike normal embroidery thread that's one solid colour, variegated thread changes colour, subtly, making each towel in this design completely unique. How romantic.
